Air Canada's Business Class: 'Book The Cook' Meals Plan

Air Canada will introduce a menu like Singapore Airlines' 'Book The Cook' on their business class flights.

Air Canada allows business class and premium economy flyers on specific routes to choose their meal beforehand. The options are limited to the menu already provided on the flight.

They are planning to expand the business class menu. You can order them a few days before the flight.

Mark Nasr, Air Canada's EVP Marketing and Digital said they cook around 14-16 Signature Class dishes for different international routes in Toronto every day.

Nasr thinks that since people travel to different parts of the world, airlines should offer a variety of foods from those countries. It's not fair that only curry is available on flights to India.

We're designing new menus. The new menus have Korean, Chinese, Indian, Middle Eastern and Latin flavours. We're also adding classic North American dishes. We want to showcase Canada's culinary talent. We plan to take advantage of this talent in the future.

Nasr didn't say when the new menus would come out. It's a tough job to release them everywhere.

We have three hubs in Vancouver, Toronto, and Montreal. They have large catering stations. This makes our operation more complex than a single-hub airline. We have to make sure we get it right.

Right now, the main goal is to let more passengers order their meal before their flight. This makes sure they get their favorite meal and less food is wasted.

We have the service at our international gateways in Canada for about 12 routes. We were being careful and safe during the implementation. We will continue the implementation.

We need 18 months to get it all set up. It's crucial we have operational support. The caterers and in-flight service workers need to be ready. We have to make sure the correct meals are loaded onto the planes.
